Perfect Breakfast


Inspired by Jaime Oliver, to make healthy yet delicious food for my family.  To be honest cooking doesn't take much time if you plan properly what you want to cook.  I come from a family passionate about food; everything that we prepared filled with love and my mom made anything and everything. 

Today, my parents came over for breakfast. The house filled with joy, laughter and fun as we'll get together..Its all about food, family and togetherness.

This morning, we had Baked eggs in a bowl, Soft Baked Potatoes and  Dark Root Cake. I will share 3 recipes at one for this Perfect Breakfast. 









Baked Eggs

Recipe:-

7 Loaf White Bread
7 small eggs
1/2 grated mozzarella 

Method : 

Preheat oven to 375F.

  1. Butter your muffin tin. Butter the bread slices. Press each slice gently into the bottom of the muffin cup and make enough room for the egg. 
  2. Season with salt and pepper and cover with cheese to your liking. Place the muffin tin back into the oven and bake for 10 to 14 minutes until the whites are just set, or to your desired consistency.




Baked Roasted Potato

Recipe:-

1/2 pound  potatoes, scrubbed clean
Cilantro
Salt and pepper
Olive oil


Method :
Heat the oven to 375 degrees F.

Cut the potatoes in half or in quarters. Place all potatoes and cilantro on a baking sheet. Season well with salt and pepper and drizzle oil on top. Toss all to combine and coat in oil.

Place the potatoes in the oven and roast for about 20 minutes,until the potatoes are nicely browned and fork tender and caramelized.



Dark Root Cake


250g beetroot
200g dark chocolate, in small pieces
200 butter
135g plain flour
1 teaspoon baking powder
5 eggs
190g caster sugar


Set the oven to 180C.

Cook the beetroot, whole and unpeeled, in a pot of boiling and salted water. Large beetroot will take up to 40mins, small beetroot about 20mins. Check tenderness by piercing with a knife. Drain them and leave to cool under running water. Slice off the stem and root and then peel them. The skin should slide off easily. Blitz them in a blender to a rough puree.

Melt the chocolate in a small bowl resting over a pot of simmering water. Leave to melt without stirring. When the chocolate looks almost melted, pour the hot coffee over it and stir to combine. Cut the butter into small cubes and add to the melted chocolate and leave to soften.

Sift together the flour, baking powder and cocoa. Separate the eggs, putting the whites in a large mixing bowl. Stir the yolks together.

Remove the bowl of chocolate from the heat and stir until the butter has melted into the chocolate. Leave for a few minutes then stir in the egg yolks. Do this quickly and mix firmly and evenly so the yolks blend in to the mixture. Fold in the beetroot. 

Whisk the egg whites till stiff, then fold in the sugar. Firmly but tenderly fold in the beaten egg whites into the chocolate mixture using a large metal spoon; work in a deep figure of eight motion being careful not to overmix and lose the air from the egg whites. Lastly fold in the flour and cocoa.

Transfer to the prepared cake tin and put in the oven, turning the heat down to 160C. Bake for 40 minutes. The rim of the cake will feel spongy and the inner part should wobble a little when shaken.

Recipe for two :
5 loaf of bread
2 eggs
2 tbsp fine sugar
1\4 tsp vanilla
1 cup red apple, diced
2 tbsp milk
Method :

1. Heat the skillet in a medium heat. Add the eggs, milk, sugar n vanilla all together in a bowl and whisk it.

2. Coat the bread both side with the egg mixture and place them on the skillet, slowly put the diced apple on top of each loaf both side..

3. Cook until its light brown. Serve with maple syrup or dusting sugar and garnish with fresh apples.

Butter Chicken Step by step

Butter Chicken

I snap step by step for this recipe. Which its fun thing to do. :)


Recipe:


Ingredients

 1/2 cup natural yoghurt
1 tsp turmeric
2 tsp garam masala
1 tsp chilli powder
1 tsp ground cumin
2 tsp grated fresh ginger
3 garlic cloves, crushed
1kg chicken breast fillets, chopped
1/2 cup unsalted butter
1 medium onion, finely chopped
1 tsp ground cardamom
1 tbsp ground cinnamon
2 tsp sweet paprika
1 can tomato puree*
Steamed rice, to serve


Method :


1. Mix the Chicken pieces,lime juice,salt and red chilli powder together in a bowl and place it for 1/2 hour.


2. Heat a Pan and roast all the powdered mix  until it darken lightly.


3.Mix the yogurt along with this roasted masala mix.


4. Add the chicken, let it simmer for 15-30minutes.


5.Heat oil in a pan and add onions,fry it till reaches golden brown. To it add the ginger-garlic paste and saute for 2 minute.

6.Add the Chicken pieces in to the onion pan (don't put the masala along with it).

7. Add the masala mixture. Cook until the gravy is thickened.


8. Serve with hot rice, poppadom and garnish with cilantro leaves.

Cinnamon Rolls

Homemade Cinnamon Rolls

Serves: 12

Soft, fluffly, homemade cinnamon rolls with cream cheese frosting.
Ingredients
1 cup warm milk (115 degrees F)
1 egg (room temperature), slightly beaten
¼ cup butter, melted
¼ cup vegetable oil
½ cup white sugar
½ teaspoon salt
3½ cups flour plus more for dusting
1 (.25 ounce) package (2¼ tsp) instant dry yeast
½ cup (1 stick) butter melted
½ cup sugar
½ cup brown sugar
3 tablespoons cinnamon
Frosting:
½ cup butter, softened
¼ cup cream cheese, softened
1½ cups powdered sugar
Instructions

  1. In a Kitchen Aid mixing bowl, add milk, egg, melted butter, oil, sugar, and salt. Add flour on top of all the liquid mixture sprinkling yeast on top. Using the dough hook, knead bread mixture on speed 3 until dough is smooth and elastic adding additional flour as needed (approx. 5-7 min.). Place dough in a greased bowl and cover with a wet towel. Allow the dough to rise until doubled in size, approximately 1 hour in a warm area. *Hint: I typically preheat my oven to 200 degrees while dough is kneading and turn the oven off when kneading is complete. From there, I stick my covered bowl into the oven and leave the oven door cracked open to allow the dough to rise.
  2. In a small bowl, combine sugar, brown sugar, and cinnamon – set aside. Turn dough onto lightly floured surface and roll into a rectangle slightly larger than a 9×13 pan (rectangle). Spread surface evenly with melted butter. and sprinkle sugar mixture on top. Use your hands to make the entire surface is evenly coated. Beginning with the long side, roll dough pinching the seam to seal.
  3. Preheat oven to 375 degrees F. Cut (I like using dental floss) into 12 equal slices and place them in a greased 9 x 13 baking pan. Cover with a damp towel and allow to rise for 30 minutes.
  4. To make the frosting, beat butter, cream cheese, and sugar on medium-high speed for three minutes. Set aside.
  5. Bake cinnamon rolls for 20 minutes or until golden brown. Frost with icing.

Giant Double Chocolate Chip Cookies


Lovelies,

Last few weeks, I was running through some dessert recipes. I have lots of chocolate chips, I don't want to waste them, so I make lots of cookies..chocolate chip, red velvet chocolate chip, double chip double layers...and so on..

Double  chocolate chip cookie is one of my favourite cookie :)
Its easy to make and the best part I love the crunchiness in it, bite after bite. 






1 cup unsalted butter, cubed
1 1/2 cup  brown sugar
2 large eggs
1/2 cup dark chocolate chip
2 cups all-purpose flour
1 tsp vanilla extract
1/4 tsp. coarse salt
1 tsp. baking powder
2 1/2 cups semi-sweet chocolate chips
1 tsp baking soda


Method

Preheat the oven to 170°C.

  1. Melt the dark chocolate either in the microwave or in a heatproof dish over a pan of simmering water.
  2. Put the flour, bicarbonate of soda and salt into a bowl.
  3. Cream the butter and sugars in another bowl. Add the melted chocolate and mix together.
  4. Beat in the vanilla extract and cold egg, and then mix in the dry ingredients. Finally stir in the chocolate morsels or chips.
  5. Scoop out using ice cream scoop and place on a lined baking sheet about 6cm apart. Do not flatten them.
  6. Cook for 10 minutes or until light brown.
  7. Leave to cool slightly on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.

Beef Curry Masala

Ingredients :

1 pound lean meat, cut into small piece
1 medium onion, chopped
3 cloves garlic, minced
2 tbsp garam masala
1 tbsp coriander
2 tbsp curry powder
1 stick cinnamon
4 potatoes, cubed
1 cup fresh coconut milk


Method :

  1. Put the oil in a skillet pan over medium heat, fry the onion,garlic, cinnamon until smell risen.
  2. Add garam masala, curry and coriander powder, stir for at least 5 minutes. 
  3. Add coconut milk and continue stirring for 4 minutes. Slowly add the potatoes and meat.
  4. Add half cup of water and let them simmer until the potatoes and meat are cook or turn tender.

Spicy Chicken Cheese Linguine & Spinach


Spicy Chicken Cheese Linguine & Spinach


4 boneless Chicken
2 tbsp milk
1/2 cup mozzarella cheese
2 tbsp oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 cup tomato puree
1/2 tbsp black pepper
1/2 lb linguine, uncooked
1 cup spinach
2 tomatoes, diced
fresh parsley for garnish


* Mixed the milk and cheese together, add the chicken and marinate it all together.

  • Heat the oil in a nonstick pan on a medium heat. Add onion and garlic; cook until brownish, slowly add the marinate chicken; cook for about 3 mins. on both side.
  • Add the fresh tomatoes, puree and pepper into the marinate chicken; cover with a lid. Cook until the chicken are properly cook.
  • In a boiling pot, add the pasta, cook for at least 9 minutes. In a different bowl, soak the spinach for 3 minutes.
  • Once the pasta is cook, place on top of the serving plate. Pour the chicken sauce on top and spinach. Sprinkle extra cheese on top. Serve with fresh herbs.

Strawberry Pancakes

Hola Lovelies,

  Pancakes? Who actually doesn't love them?! Its an easiest thing to make and not much of hassle. 

Since I was young my mother would always make us pancakes, doesn't matter what flavor but pancakes are like a part of our life lol..My mum used to make oat pancake,chocolate,raisin, etc you name it..She's a superwoman!

When I got married, pancake didn't leave me behind haha...my husband is pancake freak. He loves his pancakes with maple syrup and dash of cinnamon on top. Oh, not to forget my nephew, when he sleep over my place. He will request colour pancakes, blue,red,orange any colour haha..cute. Soon I'll be making this for my son. 

Last month, I made this Strawberries pancakes. Its sourish yet sugary. 


Classic Strawberry Pancake


Recipe

Ingredients :

1 1/2 cups flour
1 cup sugar
2 eggs
1/2 cup fresh milk
1 tsp baking powder
1 cup strawberry puree

 Instruction :

Mix all the ingredients together. Make sure its not to watery nor too thick, its should just be in between. 
cook them in a medium heat pan until its light brown and garnish with fresh strawberry that has been dipped in a maple syrup for 3 minutes. And dash with cinnamon on top the strawberry. 

taada~ that's way too easy hahaha...

Moist Chocolate Cake



   I'm a chocoholic, I love them and to be honest I eat chocolate almost everyday. Its just make me happy. haha..

The photo above its Moist chocolate cake; its soft,tender and definitely moist ;-). I promise Aara http://sweets-n-spices.blogspot.com/ , that I'll share this recipe with her. Aara, this is for you honey. I hope you will be able to make it soon and share the photo with me. 

Recipe :

1 cup Flour
1 cup Sugar
1/2 cup Cocoa powder
1 tsp Baking soda
1 egg, beaten
1/2 butter/ oil 
1/2 cup Milk
1 tsp Vanilla extract
1/2 cup Warm water

Instruction :

Preheat the oven at 300*c. Grease the baking dish with butter or cooking spray.

1. Combine all the dry ingredients together, flour,cocoa,baking soda.

2. Beat the butter & sugar until light and fluffy.

3. Add the milk into the butter mixture, and beat for 2 minutes. Add the vanilla extract.

4.  Slowly, add the dry ingredient mixture with boiling water. alternately, beginning with flour and ending with flour. Scape both sides if needed. Beat in medium speed. for 2-3 minutes. 

5. Pour into the baking dish and bake for about 30-35 minutes. 

6. Cool the cake on the wire rack before frost it. 


Topping 

Chocolate Gooey Icing

1 Can of unsweetened condensed milk

2 Cups of semi-sweet chocolate chip


* Mix milk and chip in a double boiler, Mix the mixture together until the chocolate sauce turn silky and smooth.

Beef Lasagna

Lasagna is my all time favorite food, when it comes to lasagna I'm very picky and its not easy to get the delicious and yummy one. I easily get disappointed when I buy it outside. Last week, my husband asked me when will i make him lasagna, since its his favorite too. He said he been wanting me to cook this since he meet me. lol...

So, I told him okay. I shall put lasagna in our menu planner this week. We went to buy all the ingredients.
This recipe I got it at the back of the San Remo Instant Lasagna packet.


Recipe :

Ingredients


250g San Remo Instant Lasagna

2 tbsp oil

1 onion, finely chopped

1 carrot, finely chopped

1 clove garlic, crushed

500g beef mince

5 tbsp tomato paste

2 x 400g canned tomatoes

2 cups chicken stock

Salt and pepper to taste

Pinch of nutmeg

2 tbsp butter

2 tbsp plain flour

2 cups milk

125g mozzarella or cheddar cheese



Method



Meat Sauce

Heat oil in a saucepan.
Add onion, carrot, and garlic, cook until soft.
Add beef mince, cook until brown. Stir in tomato paste, canned tomatoes, and chicken stock.
Season with salt, pepper, and nutmeg.
Cover and cook gently 20 minutes.
Cheese Sauce

Melt butter in a separate saucepan, stir in flour and cook for 2 minutes over gentle heat.
Remove from the heat, stir in milk.
Return to heat, stir until thick and smooth.
Season with salt, pepper, and add mozzarella or cheddar cheese, stirring over low heat until cheese melts.
Assembly

Preheat oven to 180°C.
Pour ½ cup of the meat sauce into a lightly greased baking dish.
Alternate layers of lasagna, meat, and cheese sauces, ending with cheese sauce layer (allow for 4 layers).
Sprinkle with grated parmesan cheese, bake in oven for 35-40 minutes. Or until cooked through (test if cooked by pricking with a fork).
Let stand 5 minutes before serving.
SERVES 4

Hint : For perfect lasagna, make sure that lasagna sheets are completely covered with the meat sauce. Important to retain a high

Cheesy Meat Pizza


Hola Lovelies, 




There's a page on facebook called : Home Baked Challenge which I participated. Monthly they'll be having one theme. On this month they choose Pizza as the challenge. Its really fun, as you are able to see everyone around the globe share their photos. There were two type of sauce given; basil pesto or tomato sauce. You choose which you prefer. 

I choose tomato sauce, I loved pizza its was a great to be a part of them team and share our thoughts,ideas and recipes :) 







Ingredients

For the dough

800 g strong white bread flour
200 g fine ground semolina flour or strong white bread flour
1 level tablespoon fine sea salt
2x7 g sachets dried yeast
1 tablespoon golden caster sugar
650 ml lukewarm water

For the tomato sauce
1 clove garlic
1 small bunch fresh basil
olive oil
400 g good-quality tinned plum tomatoes
sea salt
freshly ground black pepper

For the topping

1 pound ground meat, minced.
85 g mozzarella
extra virgin olive oil
1 cup carrot, grated


Method :




To make the dough:

1. Pile the flour and salt on to a clean surface and make an 18cm well in the centre. Add your yeast and sugar to the lukewarm water, mix up with a fork and leave for a few minutes, then pour into the well.
2. Using a fork and a circular movement, slowly bring in the flour from the inner edge of the well and mix into the water. It will look like thick porridge. Continue to mix, bringing in all the flour. When the dough comes together and becomes too hard to mix with your fork, flour your hands and begin to pat it into a ball.
3. Knead the dough by rolling it backward and forward, using your left hand to stretch the dough toward you and your right hand to push the dough away from you at the same time. Repeat this for 10 minutes, until you have a smooth, springy, soft dough.
4. Place the dough in a lightly greased bowl. Cover with a kitchen towel or plastic wrap and let double in size for about 45 minutes.

To make the sauce:

5. Peel and finely slice the garlic. Pick the basil leaves and discard the stalks. Heat a saucepan on a medium-low heat and add a splash of olive oil and the garlic. Cook gently until the garlic starts to turn golden, then add most of the basil leaves, the tomatoes, and a good pinch of salt and pepper. Cook gently for around 20 minutes, or until smooth, mashing the tomatoes up with a wooden spoon as it cooks.
6. When done, have a little taste, and season again if needed.

To make the pizza:

7. Divide the dough in two. Wrap one half in plastic wrap and freeze for another batch (see Jamie's tips above). With the other half, divide the dough into 4 balls. Flour and cover each ball with plastic wrap, and let it rest for about 15 minutes. This will make it easier to roll it thinly.
8. Take a piece of the dough, dust your surface and the dough with a little flour or semolina, and roll it out into a rough circle about 0.5cm thick. Tear off an appropriately sized piece of tin foil, rub it with olive oil, dust it well with flour or semolina and place the pizza base on top. Continue doing the same with the other pieces and then, if you dust them with a little flour, you can pile them up into a stack, cover them with cling film and put them in the fridge
9. When you're ready to cook them, preheat your oven to 250°C/500°F/gas 9.
10. Put two of the rolled-out dough rounds onto each of two oiled baking sheets. At this stage you can apply your topping. Smear the tomato sauce over the base of your pizzas and spread it out to the edges. Tear over the mozzarella, minced meat and scatter with the remaining basil leaves. Drizzle with a tiny bit of extra virgin olive oil and add a pinch of salt and pepper. If you can, cook the pizzas on a piece of granite in your conventional oven – if not, do them one by one on pieces of tin foil directly on the bars of the oven shelf, towards the bottom of the oven. Cook for 7 to 10 minutes, until the pizzas are golden and crispy.


Potato Pie

     I'm back, sorry I've been busy baking lately and pretty tied to really update anything on my blog :-)
Anyway, today I finally able to share some of the recipes I've been preparing through the week.

   Last Friday, I prepared mozzarella crusted chicken with asparagus for dinner & Potato baked with cheese and beef bacon. The funny part was after I finished boiling the potatoes I cut them into halves, and all the sudden my husband came to the kitchen and offer to help for dinner. So I said why not, I told him i need to take the potato out and make sure to leave the skin as it has been. Then while I was attending to my son Abraham, I when to the kitchen just to check on my husband..lol I found my husband has mashed all the potatoes hahaha....I'm like Oh My God! what have you done...I wanted to maked baked potatoes not mashed potatoes lol...

Then, I said its okay. we just prepare mashed potato then. lol...all the sudden, I get the idea of making Potato Pie, which is actually easy and healthy and totally delicious!! yippie. So its worth while that my husband mashed all the potatoes hahaha ..we get another new recipes in our monthly menu planner.


Recipe :

Ingredients

5 potatoes, peeled the skin
1 cup grated mozzarella cheese
1 cup minced meat
1 medium onion
5 cloves of garlic






Method :

Preheat oven at 180* c
1. Boil the potatoes until soft and tender.
2. mashed the potatoes with potatoes masher. 
3. Fry the minced meat on a low heat pan, together with garlic and onion.
4. pour the meat into a pie dish pan, and place the mashed potatoes on top the meat.
5. Spread the cheese on top, too get the cheesy taste.
6. Bake for about 20 - 30 minutes until light golden brown.
7. Serve with brown sauce* optional

This pie dish its the simple, easy and quick dinner for you. Plus its delicious as well. Its best to eat while its hot.
