Punjabi Cuisine : Aloo Palak


 Hola lovelies, 

 Few weeks back we had a amazing family dinner at Tasty Chapati, they served all the delicious punjabi food. I enjoyed the food so does the family gathering :) Its been a while since we all really spend time together like that. Miss it!


Yesterday I prepared Punjabi dish, as I married to a handsome Punjabi guy. Its just so wrong if I don't learn or try to cook Punjabi dishes for my dear husband. So last night I prepare this simple dish for him. I got another dish I did. It was call Mutton palak, its super delicious






Aloo Palak



wash the spinach till the dirt is gone. and blend them with garlic

Heat oil in a pan. Add the cumin and let the seeds sizzle and turn brown. Add the potatoes, salt and the turmeric; stir them around the pan so all the spices and onions coat the potatoes. Fry the potatoes for about 2 minutes – till the potato cubes start having a glazed look.

Add the spinach & cover the pan. Cook for about 5-8 minutes at medium heat or till the potatoes are cooked through.

Switch off the heat immediately. Cover the pan and let it sit for a couple of minutes. Serve with flatbread or rice

Chicken in Tomato & Garlic Sauce





Our delicious dinner today <3 will share the recipe after I finish this delicious dish haha...

Its my first time making this...Its totally delicious yummy, you can get the delicious flavors & fragrant from the herbs and juice from the chicken itself!

This dish can be serve with pasta,rice and bread <3 




ingredients
8 pieces drumstick Or Thighs
Salt And Pepper, to taste
3 Tablespoons Olive Oil
1 Tablespoon Butter
1 can  Diced Tomatoes
5 Whole Tomatoes, diced
2 Tablespoons Tomato Paste
 Basil, Parsley, Sage, Rosemary
8 cloves Garlic
 Grated Parmesan Cheese, For Serving
1/2 cup Orange juice / white wine / red wine

1. Begin by salting and peppering the chicken. You can use thighs, legs…whatever chicken you have.

2. Melt butter in the oilve oil over medium heat.

3. When the oil is hot, add in the chicken, fry them until a little brownish.Then remove the chicken to a clean plate.

4. Grab some orange juice and pour into the hot oil, you can listen to the sizzling sound ;). 

5. Add all the tomatoes at once. Let the mixture come to boil for about 3-4 minutes.

6. Add the herbs and chicken together. Mix all the together. Lastly add the garlic into the pot. Let them cook for about 5 minutes until all the taste blend together with the chicken.

Roti Canai - Authentic Malaysian Recipe






Roti Canai is one of Malaysian Authentic food, Roti Canai is incredibly easy and must try! If you're in Malaysia this is one food you can find everywhere and anywhere, from the plain Roti Canai to flavors Roti Canai. Yummy. 

My mum usually prepare this delicious Roti Canai at home. As for yesterday, Its my first time making it and it turn out exactly like mum did, feeling proud.. ;)

I'm going to share this easy peasy recipe with you all. Can have it for breakfast, lunch even dinner too!

Ingredients

1-1/2 cups all purpose flour
1/2 cup ghee 
1/2 cup water, give or take few tbsp.
Salt to taste

Method

1.Mix the salt in the water.

2.Put the flour in a mixing bowl. Add the salted water gradually.

3.Mix the flour into a dough. kneed until smooth. Make sure the texture of the dough is not too sticky and gooey.

4.Oil your hands with cooking oil and then make the dough into palm sized balls.

5.In a bowl pour some oil so that the dough doesn't stick to the bowl. Put in the balls, coating it with oil as you put one on top of each other. After it is all in a bowl, totally immerse it in oil. Leave over 2 hours.

6.Oil your kneading space. Take out one dough ball, flatten it out into with you palms until the size of a dinner plate.

7.Flip the dough a couple of times and spread it out until paper thin.

9.Grease a flat pan or skillet with cooking oil and cook until golden brown.

Mango Chocolate Swirl Muffin


MANGO CHOCOLATE SWIRL MUFFIN









Lovelies, today I'm going to share Egg less Butter less Muffin Mango Chocolate Swirl cake. This is Home Baker's Challenge episode 2#

The first episode was pizza, for this month its was a delicious swirl cake. For this month Sanjee Vijay is the one who choose this beautiful cake. We were given two option; one is with egg and butter & another is eggless and butterless.

For this challenge, I choose the vegan version.

I bought fresh Mango, slice them & blend in the juicer. Because i prefer fresh pulp, which I find its important for my customer to buy good quality treats. This vegan recipe is definitely delicious, soft, tender and healthier too :-)


Recipe :

2 Cups All purpose flour ( I used superfine flour)

1 1/2 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda

1/4 Teaspoon salt

3/4 cups  castor sugar

1/4 cup cocoa powder ( mix with 2 tbsp of lukewarm water)

5 tbsp Oil

1 tsp Vanilla extract

2 1/2 cup mango pulp

1/4 cup milk

1/4 cup natural yogurt



Instruction :

Preheat the oven to 350 F, 170*C. Prepare your mould, slightly grease your mould and line them with muffin cups.

Meanwhile, in a mixing bowl mix the sugar and oil together, mix them until well mixed. Next, add the pulp, milk, yogurt, vanilla and whisk it.

In a different bowl combined flour, soda, baking powder & salt together. Slowly, add them into the wet ingredients and mix them until well combined.

Add the cocoa in a cup with the 2 tablespoon of water & mix well.

Then transfer half of the mango batter into a different bowl and add the cocoa paste into the another half batter.

Scoop the mango batter and cocoa batter alternately into the muffin tray. Use a stick to make a swirl.

Bake the cake for 15 - 20 minutes or until the bake bounce back when you touch.

Beef with Soy Sauce and Ginger

This beautiful delicious colourful dish it got a wonderful taste!  I got this recipe from Jaime Oliver "The Britian's Most Exciting Chef".

This recipe is from his book  : The Naked Chef 2.

8 Ounce Sirloin Steaks
sea salt and freshly ground black pepper
2 bok choy ( even spinach or any other greens will do)
8 Tbsp Soy Sauce
1 thumb-sized piece of ginger, peeled
1 Chili, deseeded and finely chopped
1/2 a garlic of clove, finely grated
1 Lime, juiced
Olive Oil

1. On a very hot pan, cook your seasoned piece of sirloin steak until medium or to your liking. Place in a plate and allow to rest for 2 minutes.

2. Now cook your greens in salted boiling water until tender.

3. While hot, pour soy sauce and sprinkle with the ginger, garlic, chili, lime juice and olive oil.

4. When the greens are cooked, simply divide onto two plates, place the sirloin pieces, place on top of the greens and drizzle with any of the infused sauce left on the resting plate.

Beef Burger

Usually when I go dine out or see food channel, I find an interesting food. I'll try and do on my own. :-)

Last weekends, I saw this burger photo on my friend facebook page and drools over it. jump up and ended up in the kitchen making my own beef burger for dinner.


Beef Burger



Recipe:

500g good-quality beef mince
2 medium size onion
4 tbsp crushed pepper
a dash of salt
4 slices of cheddar cheese
4 burger bun
Mayo
Butter
Spinach


Method :

  • Mix the onion, mince, pepper and salt together. Make them into a medium size balls and use the palm of your hand to flatten it.
  • Spread butter on burger bun and bake for 3 minutes. 
  • Fry the patties on a skillet, and sprinkle small amount of oil. Cook until it turn brownish, up to your choice, medium rare, medium well or well done :)
  • Rinse the spinach with warm water. 
  • After the bun is done, spread with mayo. Place the beef patties on each bun while its still hot and cover with cheese, so it will melt on the patties. Then put in the spinach.

Its nice to eat with pickle and mustard too. Its actually up to a person taste bud.

Soft Doughnut




Doughnuts, is one of my favourite treats. 3 days ago, my families came over for dinner...they arrived around 6-ish..I prepared doughnuts since there will be kids around. They would love to enjoy some treats don't they? 

This dough I made its soft and milky & delicious, I can't stop eating lol..

Recipe
2 1/2 cups flour
1/2 tsp salt
2 tbsp sugar
1 egg
3 tbsp  butter
1 tsp vanilla essence
2 tsp dry active yeast
2/4 cup of milk

1. Dissolve yeast in the warm water and set it aside until it gets frothy. Combined flour, sugar, salt together and mix it well.
2. Add in egg, margarine, yeast mixture and vanilla. Turn on the mixer and slowly drizzle in the milk until dough comes together (if dough is too soft add in a few tbsp more flour) Continue to knead until you get nice smooth dough. Cover the bowl with a dry kitchen towel and let it rise for an hour or double its size at a warm place.
3. Punch down the dough and remove onto a floured work tabletop. Roll out the dough to about 1/4" thick and cut the dough out into rounds with a donuts cutter. 
4. Let the dough rise again for about 30 minutes or until they feel light and spongy. Heat oil for deep-frying over medium heat. Slip a few donuts into the oil at a time, leaving enough room for them to expand. Make sure that the oil is not too hot otherwise the donuts will not be cooked inside.
5. When the donuts are golden brown, turn them over and cook the other side. It takes about 2–3 minutes to cook through. When donuts are done, remove from oil and drain the oil on paper towels before rolling them in sugar or glaze of your choice.

Japanese dish part 2 : Yellow Rice



 Lovelies, yesterday I shared Japanese Dish part 1 . Today its going to be the part 2, yellow rice :-)


Yellow Rice recipe

Cups of Basmati Rice
1/4 Cup of Butter, Melted
1 Heaping Tablespoon of Raw Sugar
1 Teaspoon Ground Cinnamon
1 Tablespoon Ground Cardamom Pods
1 Level Teaspoon Ground Turmeric
1/2 Cup of Golden Raisins
1 Teaspoon Salt
2 Cups of Water

method :
Bring the water and salt to a boil on the stove
Add in the butter, rice and turmeric and bring the water back up to a boil
Add in the rest of the seasonings and raisins, stir well and cover
Reduce heat and allow the rice to simmer for 10 minutes or until nearly all the water has been absorbed
Remove from heat and let stand covered for an additional 5 minutes
Fluff with a fork before serving

Japanese Dish part 1 : Kimchi

Hey lovelies,

I hope all of you are doing well, its been a busy for me. Been receiving orders non stop, bare with me if I late update for this past few weeks.

Today after I took my prince Abraham for his check I rushed back to prepare dinner. I been wanting to prepare my own Japanese dish rather than dine out :)

For dinner, I prepare Yellow Rice, Kimchi and Tangy Baked Fish. As for today I'll share Kimchi with you all. Its easy, delicious, soupy and juicy. I love it so much!!



Recipe :

1 large Chinese or Napa Cabbage
1 gallon  water
1/2 cup  coarse salt
1 small head of garlic, peeled and finely minced
1 2-inch piece of fresh ginger, peeled and minced
1/4  cup fish sauce
1/2  Korean chili powder
1 bunch green onions, cut into 1-inch lengths
1 medium horse- radish, peeled and grated
1 teaspoon sugar or honey


  • Slice the cabbage lengthwise in half, then slice each half lengthwise into 3 sections. Cut away the   tough stem chunks.
  • Dissolve the salt in the water in a very large container, then submerge the cabbage under water. Put a plate on top to make sure they stay under water, then let stand for 2 hours
  • Mix the other ingredients in a very large  bowl.
  • Drain the cabbage, rinse it, and squeeze it dry.
  • Mix it all up.

Easy Delicious Apple Pie

Sorry that I haven't been update any latest recipes. Its been a busy week, spending time with my nephews and nieces. Its school holidays and they're staying at my mum's house...

Anyway, last Monday I prepared Chicken pie for my 1 year anniversary, time flies and we're already married for a year. :D what a bless journey! So, as I was saying about the pie..I have left over dough, I don't want to waste it..so next day I make easy peesy Apple Pie..

My partner love Apple pie so much, when we were dating back then..he always make apple strudel for me. 
..this recipe its really easy fast and and super juicy! 




Recipe :

pastry :
Ingredients

400g flour
200g butter
2 or 3 tablespoons water or milk, or more if needed

Sift the flour into a bowl. Add the butter and rub in with your fingers until the mix looks like breadcrumbs.
Add small amounts of water or milk into the mixture and stir or shape with your hands until all the mix comes together.


Apple :

Ingredients:

6 medium Granny Smith apples
2/3 cup packed light brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg

Apple Pie Recipe Instructions:

Preheat oven to 375°. Peel and slice apples (slices should be thin, but need not be uniform). If you have a food processor, use the slicing blade to speed up the process.
Place apple slices in a large bowl. Add brown sugar, cinnamon and nutmeg; using your hands, toss until all slices are fairly evenly coated. Place one pie crust in a 9-inch pie plate. Add half of the apple mixture. Place four slices of butter, spaced evenly, on top of the apples. Add remaining apple mixture, arranging the slices so they form a small mound. Top with remaining butter.
Place second pie crust over filling. Seal the edges of both crusts by pressing the crusts together, and then tucking them under to form an even edge. Use your hands to form a decorative scalloped edge if desired. With a sharp paring knife, make four 1-inch to 2-inch slits in the top pastry. The slits should form a cross shape, but without meeting in the center.
Cover edges of pie crust with a pie shield or ring of foil (to keep the crust from over-browning). Bake for 30 minutes. Remove pie shield or foil. Bake for 15-20 more minutes or until apples are tender when a toothpick is inserted through one of the slits. Cool for 1-2 hours before serving.
